Eating well during the Festival of Lights
For many Jewish Americans, Hanukkah is a wonderful time to gather together and enjoy beloved family recipes with the people they love. As is the case with any other special occasion that involves food, people with kidney disease have to monitor more closely what they eat than people without kidney disease. Fortunately, AKF's Kidney Kitchen can help take out the guess work of what to eat. Here are some kidney-friendly recipes that will be a hit this Hanukkah:
Veggie Latkes
While root veggies tend to have high potassium, this mixture of roots, zucchini and flavorings makes for a kidney-friendly way to enjoy these crunchy treats. They take 20 minutes to prepare, 15 minutes to cook and require the following ingredients: zucchini, beet, parsnip, carrot, eggs, flour, minced garlic, parsley, sea salt, cayenne pepper, black pepper, paprika, olive oil and applesauce. You'll also need a frying pan and a vegetable grater.

Barbecued Brisket
Brisket is a special cut of beef made for slow cooking. This BBQ brisket is deliciously tender, juicy and smothered with your favorite BBQ sauce. It takes 10 minutes to prepare and between 5-8 hours to cook, depending on how much meat you're cooking. You'll need the following ingredients: trimmed beef brisket, water, bay leaves and your favorite barbeque sauce.

Cinnamon Scented Applesauce
This classic will take you right back to your childhood. Enjoy it for breakfast with oatmeal or on its own for a great snack. It takes just five minutes to prep and 20 minutes to cook, and requires the following ingredients: granny smith apples, fuji apples, lemon juice, sugar, cinnamon, nutmeg and water.

Strawberry Olive Oil Cake
This unique, gluten-free cake gets its interesting texture from the ground pistachios and cornmeal. It takes 20 minutes to prepare and 55 minutes to cook, and requires the following ingredients: cooking spray, shelled pistachios, sugar, eggs, olive oil, cornmeal or polenta, baking powder, salt, strawberries and fraiche or yogurt garnish. You'll also need a food processor or spice grinder, electric mixer and a 9-inch round cake pan.

Rosemary Olive Oil Crackers
The hint of fresh rosemary makes these tasty crackers an appealing snack that is much lower in sodium than the store-bought kind. They are easy to make and even easier to enjoy with your favorite dip or a serving of cheese. They take 20 minutes to prepare and 15 minutes to cook, and require the following ingredients: unbleached flour, rosemary, sugar, sea salt, black pepper, water and olive oil. You'll also need a pizza cutter, baking sheet and parchment paper.
